Moisture

Like almost all living creatures, bacteria need water to allow them to grow and multiply. They cannot multiply in dried foods such as pasta, flour or rice but as soon as water has been added to the product, then any bacteria present can start to grow. Salt or sugar in foods, such as in bacon or jam, will make the moisture in the food unavailable to bacteria and therefore the food will keep longer, because the bacteria cannot grow quickly. |
